Happy Easter everyone. Thought you might like a slice of the Simnel Cake I made, sorry should have taken a photo before we tucked into it but we just couldn’t help ourselves. For those of you who haven’t heard of a Simnel Cake it is a light fruit cake with a layer of marzipan inside (yum) and when it is baked you put another layer of marzipan on top and then 11 marzipan balls to represent the apostles and put the whole thing under the grill for 1-2 mins to brown the marzipan. I haven’t made one before but was thrilled that it came out well, it is delicious. For those of you who know Lardy Cake it has a similar taste.

Yum! Now that’s a fine piece of torture. Looks delicious. Won’t be showing this to my family, I’ll be in trouble for not making one myself… Next year!

We were surprised how much activity happens with celebrating Easter in Holland when we lived there .. it was amazing !

Did your layer of Marzipan within the cake remain after baking?
Mine completely disappeared and I am still disgruntled about it!
Yes the marzipan remains although it melted and so wasnt an obvious layer of marizipan
